The temperature variations between day and night encourage the development of clear and complex aromas in the grapes. How it is produced
The process begins with a manual harvest, usually carried out in mid-September with meticulous fruit selection. Fermentation takes place in stainless steel tanks at controlled temperature for about nine days, to ensure a precise extraction of colour and aromas. Afterwards, the wine matures for six months in large barrels, a period of ageing that softens its structural profile without masking the varietal nuances. This is followed by a final two-month rest in concrete vats, a crucial step to stabilise the organoleptic notes and preserve the wine's vibrant acidity.
