The Recioto della Valpolicella Classico Giovanni Allegrini by Allegrini is a sweet red passito wine from Veneto with a Denominazione di Origine Controllata e Garantita (DOCG) status. Made from a refined blend of Corvina Veronese, Corvinone, Rondinella, and Oseleta, it expresses a full and concentrated structure, balanced by a vibrant freshness and soft, velvety tannins. The aromatic bouquet reveals elegant notes of ripe and dried fruit, accompanied by an enveloping blackberry jam. On the palate, nuances of sweet spices, dark chocolate, mint, and violet are perceived, leading to a long and balanced finish, while to the eye, it presents an intense ruby red colour with brilliant purple reflections.
Provenance
This wine originates in the heart of Valpolicella Classica, from exceptional vineyards located among the hills of Sant’Ambrogio di Valpolicella, San Pietro in Cariano, and Negrar di Valpolicella, including historic plots such as La Poja and La Grola. The limestone-based soils, rich in rock fragments, ensure a well--drained soil, ideal for vines grown using the Guyot system with a south-eastern exposure. This particular geological composition gives the wine a remarkable gustatory precision, enhancing the purity of the fruit. Produced by Allegrini, this Recioto della Valpolicella is a tribute to the founder Giovanni Allegrini, of whom it was the favourite wine.
Production process
Production begins in September with a meticulous hand-harvest and the selection of the best bunches. The grapes are left to wither in drying lofts, where the natural weight loss allows aromas and extracts to concentrate. Towards the end of January, after a soft pressing, fermentation begins at a controlled temperature, interrupted at the appropriate time to preserve the high residual sugar and the natural sweetness of the wine. Ageing continues for fourteen months in French barrels, followed by a period in bulk and a further period of resting before release, aimed at achieving perfect sensory harmony.
