The vines have an average age of between forty and forty-five years and are rooted in calcareous marl soils interspersed with layers of sand. Frequent replanting takes place in carefully selected plots of land chosen for their abundance of clay and calcium carbonate. This unique geological composition shapes the character of the wine, giving it a rigorous structure and a profile of great depth.
How it is produced
The harvest is carried out by hand, accompanied by careful selection of the bunches. Vinification begins with maceration on the skins in stainless steel tanks, while fermentation is triggered exclusively by indigenous yeasts. The must rests for about thirty days at controlled temperatures. After repeated rackings, the wine is transferred to large Slavonian oak barrels, where it matures and refines for twenty-eight months. During this period, it consolidates its olfactory architecture, releasing notes of vanilla pod, rose petals, plum and refreshing citrus peel.
