Where it comes from
This white wine originates in Galicia, in the Cambados area located in the El Salnés zone. The grapes come from vines over thirty years old managed with low yields, aiming to maintain the plant's natural biological balance. The roots delve into soils rich in decomposed granite and clay, benefiting from optimal south-west exposure. These soil and climate conditions are clearly reflected in the glass, enhancing the citrus component and defining the pronounced mineral character typical of this area.
How it is produced
Vinification follows practices aimed at minimal intervention both in the vineyard and in the cellar. The whole bunches, harvested exclusively by hand, undergo a gentle pneumatic pressing at low pressure without any preliminary destemming. Fermentation starts spontaneously thanks to indigenous yeasts, followed by eleven months of ageing on fine lees in French oak barrels. The bâtonnage technique gives the wine body and density, which is finally bottled without fining and rests in glass for five months, stabilising its intense aromatic profile.

We grow our vines according to the principles of minimum intervention, seeking biological balance in the plant, which enables the terroir to express itself.
We fertilize our vineyards with compost made from grape pomace and algae that we collect in the Ría de Arousa, which essentially provide trace elements, minerals and antibiotics which improve the plant’s resistance to disease.
It is essential to have controlled yields and perfectly mature grapes to enable the wines to express the minerality and salinity of our land. We carry out "green harvesting" to help the bunches of grapes to reach optimal maturity – removing vegetation (leaf thinning), eliminating those grape clusters which are not going to ripen properly (cluster thinning) and removing unsuitable grapes (pre-harvesting).
