The vines, managed through a careful organic approach, have an average age of thirty-five years, ensuring greater depth and intensity. How it is produced
The process strictly follows the rules of the Traditional Method, starting with vinification that includes complete malolactic fermentation. To preserve the integrity of the fruit, the wine is prepared for the prise de mousse without fining or filtration. Ageing requires a period on the lees of between twenty-four and thirty-six months, the time needed to enhance structural complexity. The process involves meticulous manual riddling, followed by disgorgement and a minimum rest of sixty days before release to the market.
