What type of wine it is
The Sauvignon from Abbazia di Novacella is a still white wine with the Alto Adige designation that expresses the pure essence of Sauvignon Blanc. Fermented and matured in stainless steel, the nose opens with clear aromas of elderflower, blackcurrant and citrus fruits, enriched by a delicate vegetal note of green pepper. The flavour profile reveals a lively sip, supported by a crisp acidity and a distinct saline mineral vein. This balanced structure concludes with a clean and persistent finish, confirming the charm of a white wine with a typically Alpine character.
Where it comes from
The grapes are grown in the specialised territories of Alto Adige, distributed between the sunny slopes of the Marklhof farm in Cornaiano and the Bressanone basin. The vineyards, trained using the Guyot system, enjoy excellent exposure and extend across various altitudes, benefiting from a breezy Alpine climate characterised by cool nights. These temperature fluctuations favour the aromatic definition of the Sauvignon Blanc bunches. The roots delve into morainic soils, rich in deposits of mica schist, paragneiss and quartzite. This permeable terroir imparts a savoury texture and a pleasant freshness to the wine.
How it is produced
The vinification aims to preserve the integrity of the varietal aromas from the moment of harvest. Temperature-controlled fermentation takes place in stainless steel tanks, using exclusively indigenous yeasts to enhance the authenticity of the fruit. Subsequently, the wine matures for around six months in the same containers, a process that keeps the palate tension and aromatic purity intact. The result is a linear and dynamic sip, characterised by a balanced acidity for a markedly fresh finish.

Also owned by the Abbey is a vineyard located in South Tyrol's main wine-growing area: the Marklhof estate in Cornaiano, on the 'wine road' near Bolzano. The sandy, dry soil and the airy climate of these hills make it possible to obtain excellent red wines, including a characteristic Kalterersee, a very fine Schiava and a very elegant Pinot Noir.
A third Novacella vineyard is located in Bolzano, around the ancient and tiny St. Mary's Monastery. Here, in the dry and very warm climate of the valley floor, a full-bodied dark Lagrein matures, which is particularly suitable for ageing.
In our wine cellar, the grapes from these three vineyards are raised to wines whose distinct character and quality has been rewarded by the loyalty of generations of friends and connoisseurs. Read more
