What kind of wine it is
The Praepositus Sylvaner from Abbazia di Novacella is a semi-aromatic white wine that expresses the authentic character of Sylvaner grapes. Produced in the Alto Adige Valle Isarco region, it displays a pale golden yellow colour with lively greenish highlights. On the nose, it offers clear notes of ripe pear, apricot, elderflower and coriander, accompanied by subtle hints of apple. On the palate, a pronounced savoury minerality emerges, giving the wine body and ensuring a long, elegant finish.
Where it comes from
This white wine originates from high-altitude vineyards located in the municipalities of Bressanone and Varna, in the heart of the Valle Isarco. The vines grow between six hundred and fifty and seven hundred metres above sea level, with a south and south-west exposure ideal for optimal aromatic ripening. The plants are trained using the Guyot system on permeable moraine soils, composed of mica schist, paragneiss and quartzite. This specific rocky matrix imparts a distinctive mineral tension to the wine.
How it is produced
The production process preserves the freshness of the fruit while enhancing its complexity. The must undergoes temperature-controlled fermentation at seventeen degrees Celsius. The maturation phase involves separate management of the different components to achieve a harmonious blend. Most of the wine rests in stainless steel tanks, while a portion matures in acacia barrels and a small amount evolves in French barriques. This technical choice defines the breadth of flavour, introducing delicate spicy notes.

Also owned by the Abbey is a vineyard located in South Tyrol's main wine-growing area: the Marklhof estate in Cornaiano, on the 'wine road' near Bolzano. The sandy, dry soil and the airy climate of these hills make it possible to obtain excellent red wines, including a characteristic Kalterersee, a very fine Schiava and a very elegant Pinot Noir.
A third Novacella vineyard is located in Bolzano, around the ancient and tiny St. Mary's Monastery. Here, in the dry and very warm climate of the valley floor, a full-bodied dark Lagrein matures, which is particularly suitable for ageing.
