Where it comes from
The wine originates from the areas of Bressanone and Varna, in the heart of South Tyrol. The vines grow on soils composed of silty-sandy gravel of morainic origin, a key factor in the pronounced minerality of the wine. The vineyard is managed using a high-density Guyot training system, with a low yield per hectare to maximise the definition of the aromas. The estate is one of the oldest wine-producing establishments in the world, where the meticulous artisan work handed down by the Augustinian canons merges with the authentic vocation of the mountain terroir of the Isarco Valley.
How it is produced
Harvesting takes place towards the end of October, ensuring an ideal level of ripeness for extracting the primary aromas. In the winery, the grapes undergo controlled fermentation, which is essential for preserving the most delicate aromas of Gewürztraminer. The vinification process and subsequent maturation take place entirely in steel tanks, enhancing the aromatic clarity without any interference. Finally, a three-month bottle ageing period allows the wine's components to integrate harmoniously, resulting in a rounded and lasting taste balance.

Also owned by the Abbey is a vineyard located in South Tyrol's main wine-growing area: the Marklhof estate in Cornaiano, on the 'wine road' near Bolzano. The sandy, dry soil and the airy climate of these hills make it possible to obtain excellent red wines, including a characteristic Kalterersee, a very fine Schiava and a very elegant Pinot Noir.
A third Novacella vineyard is located in Bolzano, around the ancient and tiny St. Mary's Monastery. Here, in the dry and very warm climate of the valley floor, a full-bodied dark Lagrein matures, which is particularly suitable for ageing.
