What kind of wine it is
The Müller Thurgau from Abbazia di Novacella is a still white wine from Alto Adige Valle Isarco, vinified and matured in stainless steel to enhance its pronounced Alpine character. Made from Müller Thurgau grapes, it offers a clear aromatic profile where fragrant notes of apple and lemon intertwine, with hints of chamomile and lemon verbena. On the palate, it reveals a light and defined structure, combining agility with an extremely juicy sip. The drinking experience is driven by a marked savouriness, enriched by lively citrus returns that lead to a mineral and clean finish, with a subtle almond aftertaste.
Where it comes from
The grapes grow in the Isarco Valley, between the Varna area and the Bressanone basin, in one of the northernmost wine-growing regions of Italy. The vineyards are situated between six hundred and nine hundred metres above sea level, immersed in an Alpine climate characterised by strong temperature variations that favour slow ripening, enhancing the aromatic elegance of the bunches. The roots sink into morainic soils, permeable and composed of mica schist, paragneiss, quartzite and limestone veins. This unique geological composition gives the wine a distinctive and profound saline note.
How it is produced
After a meticulous manual harvest, the bunches undergo gentle pressing and subsequent static clarification of the must. Fermentation takes place in stainless steel tanks at a controlled temperature, in order to preserve the semi-aromatic essence of the grape variety. The process continues with maturation on fine lees, again in steel for several months, to stabilise the gustatory balance. This careful process gives the wine a bright pale straw yellow colour, enhancing its natural freshness and persistence at every stage of tasting.

Also owned by the Abbey is a vineyard located in South Tyrol's main wine-growing area: the Marklhof estate in Cornaiano, on the 'wine road' near Bolzano. The sandy, dry soil and the airy climate of these hills make it possible to obtain excellent red wines, including a characteristic Kalterersee, a very fine Schiava and a very elegant Pinot Noir.
A third Novacella vineyard is located in Bolzano, around the ancient and tiny St. Mary's Monastery. Here, in the dry and very warm climate of the valley floor, a full-bodied dark Lagrein matures, which is particularly suitable for ageing.
