What kind of wine it is
Grüner Veltliner from Abbazia di Novacella is a still white wine with the Alto Adige Valle Isarco designation. On the nose, it offers clear notes of green apple and lavender, while on the palate it is lively, fresh, and supported by a pronounced savoury and mineral streak. The vinification and subsequent six-month maturation take place in stainless steel tanks and large oak barrels, which define its structure. The persistent finish with white pepper makes it ideal for accompanying seafood starters and marinated salmon.
Where it comes from
The vines take root in Varna, in Italy's northernmost wine-growing area. The rows thrive on sunny slopes facing south and south-west, situated between six hundred and nine hundred metres above sea level. Here, the high-altitude climate, caressed by Dolomite breezes, enhances the aromatic complexity of the grapes. The subsoil consists of gravelly moraine soils and silty-sandy formations that ensure drainage and a wealth of minerals. These particular soil and climate conditions give the wine a distinctive saline character and taut freshness, reflecting the nature of the surrounding Alpine environment in the glass.
How it is produced
The vineyard is managed using the Guyot system, aimed at maintaining balanced yields to promote high quality. Manual harvesting ensures careful selection of the fruit. In the winery, fermentation at controlled temperature is carried out by dividing the must between stainless steel tanks and large oak barrels. This approach preserves the fragrance of the grape variety, while also adding a subtle softness to the palate. A further six months of maturation in the same containers rounds out the structure and defines its elegance, resulting in a harmonious and long-lasting white wine.

Also owned by the Abbey is a vineyard located in South Tyrol's main wine-growing area: the Marklhof estate in Cornaiano, on the 'wine road' near Bolzano. The sandy, dry soil and the airy climate of these hills make it possible to obtain excellent red wines, including a characteristic Kalterersee, a very fine Schiava and a very elegant Pinot Noir.
A third Novacella vineyard is located in Bolzano, around the ancient and tiny St. Mary's Monastery. Here, in the dry and very warm climate of the valley floor, a full-bodied dark Lagrein matures, which is particularly suitable for ageing.
