Abate Nero Trentodoc Domini Brut is a white wine produced according to the principles of the Traditional Method. Made from Chardonnay grapes, it features a Brut dosage with a soft and balanced profile. In the glass, it displays a fine and persistent perlage. On the nose, it offers intense aromas of ripe yellow-fleshed fruit, candied citron and baked apple, followed by the evolved nuances typical of Chardonnay. On the palate, it reveals a creamy texture and a sip of absolute precision.

Where it comes from

This sparkling wine originates in Trentino-Alto Adige, reaching its highest expression in the Trento area. The project is signed by Abate Nero, a producer that maintains an artisanal approach aimed at enhancing the mountain environment. This Trentino origin provides a clear territorial character, giving the wine excellent freshness. The bunches come from meticulous selection in the vineyard, ensuring constant harmony of flavour.

How it is produced

The process begins with gentle pressing and a first fermentation in stainless steel. The second fermentation takes place in the bottle, as required by the Traditional Method, including ageing on the lees for between forty-eight and sixty months. This prolonged rest gives an intense straw yellow colour with golden highlights. On the palate, notes of ripe apple and candied citrus meet elegant hints of toasted hazelnut and sweet almond, finishing with a persistent aftertaste.

Abate Nero, whose name evokes the figure of the French abbot considered to be the ‘father’ of Champagne, was born in the early 1970s from the commitment of a few friends, including Luciano Lunelli, all linked to the agronomic and wine sector, determined to develop more and more singular, good, prestigious ‘bubbles’.

Patience is at home here, the wine rests on the lees for frothing much longer than usual. Don't be surprised, therefore, if you find dates on the label that date back a few decades. Every stage is manual, for direct control of every single bottle: only in this way does Abate Nero achieve its charm.
